Ingredients:
Four 4oz boneless skinless chicken breasts, butterflied
1 tsp. Greek seasoning
Salt and pepper
1 cup Japanese panko bread crumbs
2 egg whites
Non-stick cooking spray
Preparation:
1. Season chicken with Greek seasoning, salt, and pepper. Let marinate for 1 hour in the fridge.
2. Coat chicken in egg white and dredge in bread crumbs. Spray lightly with non stick spray.
3. Bake in preheated oven at 425 degrees for 15 minutes, then decrease oven temp to 350 degrees for 20 minutes.
