½ pound lump blue crab
½ pound blue crab claw meat
½ cup diced onions
½ green bell pepper, diced
¼ cup roasted red pepper, diced
2 teaspoons chopped garlic
¾ cup butter
4 cups prepared corn bread, crumbled
1 tablespoon chopped parsley
½ tablespoon Old Bay seasoning
½ teaspoon ground black pepper
1. Melt butter in a heavy-bottomed sauté pan.
Add onions, peppers, and garlic and “sweat” until tender, not browned.
2. Add remaining ingredients and fold mixture lightly, just to incorporate.
3. Remove from heat and allow to cool. Refrigerate until ready to use.
