Ancho Chile Turkey Breast

This recipe was provided by Jeff Everts of the Houstonian Hotel, Club and Spa.

Ingredients:

1 each Raw Turkey Breast
4 each Ancho chilies, seeded and rehydrated in hot water
½ cup Water from chilies
2 Tbsp A-1 Steak Sauce
¼ cup Ketchup
1 Tbsp Tabasco
1 Tbsp Apple Cider Vinegar
1 Tbsp Cajun Spice
¼ cup Honey
2 Tbsp Myers Dark Rum
2 Tbsp Kosher Salt

Preparation:

1. Mix the above ten ingredients together. Pour over turkey breast and let marinate for 24 hours.
2. Roast turkey breast at 330 degrees for 1 hour and 10 mins.
3. Remove from oven and let rest. It should reach an internal temperature of 165 degrees.
4. Slice turkey breast against the grain.
5. 4 oz. of lean turkey is enough for a meal.
